Description

Sausage Egg & Cheese Roll-Ups are a delicious, grab-and-go breakfast treat perfect for busy mornings. Fluffy scrambled eggs, savory cooked sausage, and melty cheese are all wrapped in buttery crescent roll dough and baked to golden perfection. These protein-packed roll-ups are easy to make, kid-friendly, and ideal for meal prepping or serving at brunch.

Ingredients

Units Scale

Crescent Roll

  • 1 can (8 ounces) refrigerated crescent roll dough (8 count)

Sausage and Eggs

  • 4 breakfast sausage links (fully cooked)
  • 3 large eggs
  • 2 tablespoons milk
  • Salt and black pepper, to taste

Cheese

  • 3/4 cup shredded cheddar cheese

Optional for Serving

  • Chopped fresh parsley
  • Salsa or hot sauce

Instructions

  1. Preheat Oven โ€“ Preheat your oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare Eggs โ€“ In a bowl, whisk together eggs, milk, salt, and pepper. Heat a non-stick skillet over medium heat, pour in the eggs, and scramble gently until just set. Remove from heat.
  3. Cook Sausage โ€“ Cook sausage links according to package instructions, then slice each link in half lengthwise for easier rolling.
  4. Assemble Roll-Ups โ€“ Unroll the crescent roll dough and separate it into 8 triangles. On the wide end of each triangle, add a spoonful of scrambled eggs, a piece of sausage, and a sprinkle of cheddar cheese.
  5. Roll and Arrange โ€“ Roll up each crescent triangle, starting at the wide end and tucking the filling as you go. Place seam-side down on the prepared baking sheet.
  6. Bake โ€“ Bake for 12โ€“14 minutes, or until the crescent rolls are golden brown and cooked through. Let cool for a few minutes before serving.
  7. Serve โ€“ Optionally garnish with fresh parsley and serve hot with salsa or hot sauce.

Notes

  • You can substitute breakfast sausage with turkey or plant-based sausage for a lighter option.
  • For added flavor, try adding chopped bell peppers or green onions to the scrambled eggs.
  • Leftovers can be cooled, wrapped, and refrigerated for up to 3 daysโ€”simply reheat in the microwave or oven.
  • These roll-ups are freezer-friendly; wrap individually and freeze for up to 1 month.
