Description

This savory breakfast casserole is loaded with seasoned sausage, melty cheese, and fluffy eggs baked over a bed of bread cubes. Itโ€™s warm, comforting, and super easy to make ahead. Perfect for feeding a crowd or meal prepping for busy mornings!

Ingredients

  • 6 large eggs

  • 2 cups milk (whole or 2%)

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 4 cups cubed bread (day-old white, sourdough, or French bread works best)

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • Optional: chopped green onions or parsley for garnish

Instructions

Preheat oven to 350ยฐF. Grease a 9×13-inch baking dish.

In a skillet over medium heat, cook the sausage until browned and fully cooked. Drain excess grease and set aside.

In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.

Add the bread cubes, cooked sausage, and cheeses to the bowl. Stir to combine.

Pour the mixture into the prepared baking dish and spread it evenly.

Bake uncovered for 40โ€“45 minutes, or until the top is golden and the center is set.

Let cool for 5โ€“10 minutes before slicing. Garnish with green onions or parsley if desired.

Notes

  • You can assemble this casserole the night before, cover, and refrigerate it. Just bake it in the morning.

  • Swap in veggies like bell peppers or spinach for extra nutrition.

  • Want a little kick? Add a dash of hot sauce or a pinch of red pepper flakes to the egg mixture.
