Instructions

  1. Prepare the Chicken:ย Preheat your oven to 375ยฐF (190ยฐC). Pat the chicken breasts dry with paper towels. Using a sharp knife, cut a horizontal slit along the side of each chicken breast to create a pocket, being careful not to cut all the way through. Season the chicken breasts inside and out with Italian seasoning, salt, and black pepper.

  3. Stuff the Chicken:ย Evenly divide the spinach and roasted red pepper mixture among the chicken breasts, stuffing it into the pockets. Place a slice of mozzarella cheese inside each pocket on top of the vegetable mixture. Secure the openings with toothpicks to keep the filling inside during cooking.
