- 4 slices of sourdough bread
- 8 large shrimp, peeled, deveined and cooked
- 2 tablespoons butter, softened
- 4 slices Gruyรจre or sharp cheddar cheese
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 small garlic clove, minced
- 1 tablespoon chopped fresh chives (optional)
- Salt and pepper to taste
Instructions
- In a small bowl, mix mayonnaise, Dijon mustard, minced garlic, chives, salt, and pepper.
- Spread the butter evenly on one side of each bread slice.
- On the non-buttered side, spread the mayonnaise-mustard mixture on two slices.
- Layer cheese slices on top of the spread, then arrange cooked shrimp evenly over the cheese. Top with remaining cheese slices and place the other bread slices on top, butter-side out.
- Heat a skillet over medium-low heat. Place the sandwiches in the skillet and grill until golden brown, about 3โ4 minutes per side, pressing gently with a spatula.
- Once cheese is melted and bread is crisp and golden, remove from skillet. Let rest for a minute, then slice in half and serve hot.
Notes
- For extra flavor, toss shrimp in a bit of paprika or Old Bay seasoning before cooking.
- If you like spice, add a few dashes of hot sauce to the mayonnaise mixture.
- You can substitute bread with whole wheat or ciabatta for a different texture.
- Use low-fat cheese or light butter to reduce calories.
