Description

These Shrimp Stuffed Avocados are creamy, zesty, and full of flavor. Juicy shrimp are tossed in a tangy, slightly spicy sauce and spooned into ripe avocado halves for a refreshing, no-cook meal. They’re quick to make, low-carb, and totally satisfying.

 


Ingredients

  • 2 ripe avocados, halved and pitted

  • 1 cup cooked shrimp, peeled, deveined, and chopped

  • 2 tbsp red onion, finely diced

  • 1 small Roma tomato, diced

  • 1 tbsp fresh cilantro, chopped

  • 1 tbsp lime juice (plus extra for drizzling)

  • 2 tbsp mayonnaise

  • 1 tsp hot sauce (like sriracha or Tabasco – optional)

  • Salt and pepper, to taste

 

  • Optional toppings: extra cilantro, lime wedges, or a sprinkle of chili flakes


Instructions

  1. Prepare the filling: In a medium bowl, mix the chopped shrimp, red onion, tomato, cilantro, lime juice, mayonnaise, hot sauce (if using), salt, and pepper until well combined.

  2. Prep the avocados: Slice avocados in half and remove the pits. If needed, scoop out a little extra flesh to make room for filling. Lightly drizzle with lime juice to prevent browning.

  3. Stuff and serve: Spoon the shrimp mixture into each avocado half. Garnish with extra cilantro or a sprinkle of chili flakes if desired.

  4. Enjoy immediately: These are best served fresh!

  • Use pre-cooked shrimp to make this recipe in minutes.

  • Want a lighter version? Swap mayo for Greek yogurt.
