Ingredients

2 ripe avocados, halved and pitted

1 cup cooked shrimp, peeled, deveined, and chopped

1 small Roma tomato, diced

1 tbsp lime juice (plus extra for drizzling)

Instructions

Prepare the filling: In a medium bowl, mix the chopped shrimp, red onion, tomato, cilantro, lime juice, mayonnaise, hot sauce (if using), salt, and pepper until well combined.

Prep the avocados: Slice avocados in half and remove the pits. If needed, scoop out a little extra flesh to make room for filling. Lightly drizzle with lime juice to prevent browning.

Stuff and serve: Spoon the shrimp mixture into each avocado half. Garnish with extra cilantro or a sprinkle of chili flakes if desired.
