Description

Skillet Huevos Rancheros is a hearty and flavorful Mexican-inspired breakfast featuring fried eggs on warm tortillas, topped with a zesty tomato-chili sauce and finished with cheese, beans, and fresh herbs.


Ingredients

  • 4 large eggs
  • 4 corn tortillas
  • 1 tablespoon olive oil
  • 1/2 cup canned black beans, drained and rinsed
  • 1 cup ranchero sauce or salsa (store-bought or homemade)
  • 1/4 cup crumbled queso fresco or feta cheese
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Salt and pepper to taste
  • Optional toppings: hot sauce, sour cream, lime wedges

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Lightly fry the tortillas one at a time until warm and slightly crispy, about 1 minute per side. Set aside and keep warm.
  3. In the same skillet, warm the black beans for 2–3 minutes. Remove and set aside.
  4. Crack the eggs into the skillet and cook to desired doneness, seasoning with salt and pepper.
  5. While eggs cook, warm the ranchero sauce in a separate small pan or microwave.
  6. To assemble, place tortillas on plates, top each with black beans, a fried egg, and a spoonful of ranchero sauce.
  7. Garnish with crumbled cheese, cilantro, avocado slices, and any additional toppings you like.

Notes

  • For extra flavor, add sautéed onions or jalapeños to the beans.
  • Use flour tortillas if preferred.
