- 4 large eggs
- 4 corn tortillas
- 1 tablespoon olive oil
- 1/2 cup canned black beans, drained and rinsed
- 1 cup ranchero sauce or salsa (store-bought or homemade)
- 1/4 cup crumbled queso fresco or feta cheese
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Salt and pepper to taste
- Optional toppings: hot sauce, sour cream, lime wedges
Instructions
- Heat olive oil in a large skillet over medium heat.
- Lightly fry the tortillas one at a time until warm and slightly crispy, about 1 minute per side. Set aside and keep warm.
- In the same skillet, warm the black beans for 2โ3 minutes. Remove and set aside.
- Crack the eggs into the skillet and cook to desired doneness, seasoning with salt and pepper.
- While eggs cook, warm the ranchero sauce in a separate small pan or microwave.
- To assemble, place tortillas on plates, top each with black beans, a fried egg, and a spoonful of ranchero sauce.
- Garnish with crumbled cheese, cilantro, avocado slices, and any additional toppings you like.
Notes
- For extra flavor, add sautรฉed onions or jalapeรฑos to the beans.
- Use flour tortillas if preferred.
