  • 4 boneless, skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup chicken broth
  • 1 (6 oz) box stuffing mix (chicken flavor)
  • 1/2 cup sour cream
  • 1/2 cup water
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup frozen mixed vegetables (optional)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Spray the inside of your slow cooker with cooking spray or lightly grease it to prevent sticking.
  2. Place the chicken breasts in the bottom of the slow cooker. Season them with black pepper, garlic powder, and onion powder.
  3. In a medium bowl, mix the cream of chicken soup, chicken broth, sour cream, and water until well combined. Pour this mixture over the chicken.
  4. Sprinkle the stuffing mix evenly on top of the soup mixture.
  5. If using, add the frozen mixed vegetables evenly across the top of the stuffing.
  6. Cover and cook on low heat for 4-6 hours, or until the chicken is cooked through and tender.
  7. Once done, stir the stuffing and serve the chicken with a little of the stuffing mixture on top.
  8. Garnish with fresh parsley, if desired, and serve hot.
