  • 1 pound ground beef
  • 4 cups russet potatoes, diced (about 4 medium potatoes)
  • 1 medium onion, chopped
  • 1 (15 oz) can red kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel), undrained

Seasonings & Pantry

  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt (adjust to taste)

For Serving

  • 1 cup shredded cheddar cheese
  • Sliced green onions, for garnish (optional)

Instructions

  1. Brown the Beef – In a large skillet over medium heat, cook the ground beef and chopped onion together until the beef is no longer pink and the onions are softened, about 6-7 minutes. Drain off excess fat.
  2. Layer Ingredients in Slow Cooker – Add the diced potatoes to the bottom of the slow cooker. Top with the browned beef and onion mixture. Then add the garlic, kidney beans, corn, diced tomatoes with green chilies, paprika, chili powder, oregano, salt, and pepper. Stir gently to combine everything.
  3. Slow Cook – Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, until the potatoes are tender.
  4. Add Cheese – In the last 15 minutes of cooking, sprinkle the shredded cheddar cheese over the top. Re-cover and let the cheese melt.
  5. Serve – Scoop into bowls and garnish with sliced green onions, if desired. Serve hot and enjoy!

Notes

  • Try swapping ground beef for ground turkey or chicken for a lighter version.
