Slow Cooker Italian Beef Sandwiches are a delicious and easy way to enjoy tender, flavorful beef with minimal effort. This recipe combines succulent shredded beef with zesty pepperoncini peppers, all cooked to perfection in a slow cooker. - 3 to 4 pounds beef chuck roast
- 1 packet (0.7 ounces) dry Italian dressing mix
- 2 cups beef broth
- 1 jar (16 ounces) pepperoncini peppers, sliced, with juice
- 1 teaspoon Italian seasoning
- 1 onion, sliced
- 12 hoagie rolls
- 12 slices provolone cheese
- Optional: Giardiniera (Italian pickled vegetables) for serving
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 4-5 minutes per side.
- Place the sliced onion at the bottom of a 6-quart slow cooker. Lay the seared roast on top of the onions.
- Sprinkle the dry Italian dressing mix and Italian seasoning over the roast. Pour in the beef broth and add the sliced pepperoncini peppers along with ยฝ cup of their juice.
- Cover and cook on low for 9-10 hours or on high for 5-6 hours, until the beef is fork-tender.
- Remove the roast from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to combine with the juices. Let it cook on low for an additional 20 minutes to absorb more flavor.
- To serve, preheat the oven to broil. Place hoagie rolls on a baking sheet and fill each with a portion of the shredded beef mixture. Top with a slice of provolone cheese.
- Broil the sandwiches until the cheese is melted and bubbly. Serve immediately, optionally topped with giardiniera for added flavor.
Notes
- For a spicier kick, add more pepperoncini peppers or include some of their seeds.
- Leftover Italian beef can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave before serving.
