Instructions
- Make the Cookie Dough:
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Chill the Dough:
- Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.
- Cut and Shape Cookies:
- Preheat your oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
- Roll out the dough to about 1/4-inch thickness. Cut out large circles for the cookie base and use a smaller circle cutter to cut out the center of half the cookies to create the โwindow.โ
- Place the cookies on the prepared baking sheets, leaving space between them.
- Bake the Cookies:
- Bake for 8-10 minutes or until the edges are lightly golden. Cool completely on a wire rack.
- Create the Globe Effect:
- Melt isomalt or clear candies according to package instructions. Carefully pour the melted mixture into the โwindowโ of the cooled cookies. Let set completely.
- Decorate and Assemble:
- Place sprinkles or decorations on the full cookie bases. Pipe a thin line of royal icing around the edges of the base cookies and top with the window cookies to seal.
