For the Cookies:

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar

  3. Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
  4. Bake for 8โ€“10 minutes, or until the edges are set and the tops look slightly crackly.
  5. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

For the Cream Cheese Filling:

  1. In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
  2. Gradually add the powdered sugar, mixing until fully incorporated. Stir in the vanilla extract.
  3. Spread or pipe the filling onto the flat side of half the cookies.
  4. Top with the remaining cookies to create sandwiches.

Notes

  • For a fun twist, roll the edges of the filled cookies in sprinkles or mini chocolate chips.
  • Store the cookies in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving.
