For the Cookies:
- 1 box (15.25 oz) strawberry cake mix
- 2 large eggs
- 1/3 cup vegetable oil
For the Cream Cheese Filling:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
For the Cookies:
- Preheat your oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir until fully combined and a soft dough forms.
- Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
- Bake for 8โ10 minutes, or until the edges are set and the tops look slightly crackly.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
For the Cream Cheese Filling:
- In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, mixing until fully incorporated. Stir in the vanilla extract.
- Spread or pipe the filling onto the flat side of half the cookies.
- Top with the remaining cookies to create sandwiches.
Notes
- For a fun twist, roll the edges of the filled cookies in sprinkles or mini chocolate chips.
- Store the cookies in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving.
