A creative and indulgent way to use leftover spaghetti, this Spaghetti Grilled Cheese combines buttery garlic bread with saucy pasta and melty cheese for the ultimate comfort food sandwich.

- 4 slices soft Italian bread
- 1 cup leftover spaghetti (saucy, like marinara or meat sauce)
- 1 cup shredded mozzarella cheese
- 2 tbsp softened butter
- 1/2 tsp garlic powder or 1 clove minced garlic
- 2 tbsp grated Parmesan cheese (optional)
Instructions
- In a small bowl, mix the softened butter with garlic powder or minced garlic to make garlic butter.
- Spread the garlic butter generously on one side of each slice of bread.
- On the unbuttered side of one slice, layer half of the shredded mozzarella, then add the leftover spaghetti, and top with the remaining mozzarella. Place the second slice of bread on top, buttered side out.
- Heat a nonstick skillet over medium heat. Add the sandwich and cook for 2โ3 minutes on each side, until golden brown and the cheese is melted.
- Let rest for a minute before slicing and serving hot.
Notes
- Don’t overstuff the sandwich to avoid sogginess and difficulty flipping.
- Use medium heat for the perfect crispy outside and melty inside.
- Cheese on both sides of the spaghetti helps prevent the bread from getting soggy.
- Day-old, cold spaghetti is easier to handle than fresh.
