- 2 cups corn kernels (fresh, frozen, or canned, drained)
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled cotija or feta cheese
- 1/2 cup all-purpose flour
- 1/2 cup breadcrumbs
- 1 large egg
- 1 jalapeรฑo, finely chopped (adjust to taste)
- 1/4 cup chopped cilantro
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Oil for frying (or baking if preferred)
Instructions
- In a large bowl, mix together the corn kernels, cheddar cheese, cotija or feta cheese, flour, breadcrumbs, egg, jalapeรฑo, cilantro, and all the spices. Stir until the mixture is well combined.
- Scoop out tablespoon-sized portions of the mixture and form them into small balls or bite-sized patties.
- Heat oil in a large skillet over medium heat. Fry the corn bites in batches, turning occasionally, until golden and crispy (about 2โ3 minutes per side).
- For baking:ย Preheat oven to 400ยฐF (200ยฐC). Place the bites on a parchment-lined baking sheet and bake for 15โ20 minutes, flipping halfway through.
- Remove from oil or oven and drain on paper towels if frying.
- Serve warm with your favorite dipping sauces, like chipotle mayo or sour cream.
Notes
- For extra heat, add a pinch of cayenne pepper or an extra jalapeรฑo.
- These can be made ahead and frozen; simply reheat in the oven for crispiness.
- For a gluten-free version, use gluten-free flour and breadcrumbs.
