Description

These Spicy Mexican Corn Bites are the perfect bite-sized snack or appetizer, bursting with bold flavors of corn, jalapeรฑos, cheese, and Mexican spices. Ingredients

  • 2 cups corn kernels (fresh, frozen, or canned, drained)
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled cotija or feta cheese
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 jalapeรฑo, finely chopped (adjust to taste)
  • 1/4 cup chopped cilantro
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Oil for frying (or baking if preferred)

Instructions

  1. In a large bowl, mix together the corn kernels, cheddar cheese, cotija or feta cheese, flour, breadcrumbs, egg, jalapeรฑo, cilantro, and all the spices. Stir until the mixture is well combined.
  2. Scoop out tablespoon-sized portions of the mixture and form them into small balls or bite-sized patties.
  3. Heat oil in a large skillet over medium heat. Fry the corn bites in batches, turning occasionally, until golden and crispy (about 2โ€“3 minutes per side).
    • For baking:ย Preheat oven to 400ยฐF (200ยฐC). Place the bites on a parchment-lined baking sheet and bake for 15โ€“20 minutes, flipping halfway through.
  4. Remove from oil or oven and drain on paper towels if frying.
  5. Serve warm with your favorite dipping sauces, like chipotle mayo or sour cream.

Notes

  • For extra heat, add a pinch of cayenne pepper or an extra jalapeรฑo.
  • These can be made ahead and frozen; simply reheat in the oven for crispiness.
  • For a gluten-free version, use gluten-free flour and breadcrumbs.
