- 1 lb sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tbsp butter
- 4 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the halved potatoes, season with salt, pepper, paprika, and thyme, and cook for about 15-20 minutes, stirring occasionally until golden and tender. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and 1 tablespoon of butter.
- Add the steak bites in a single layer, cooking for 2-3 minutes per side until browned and cooked to your desired doneness.
- Add minced garlic to the skillet and cook for another 1-2 minutes, stirring frequently.
- Return the cooked potatoes to the skillet, toss to combine, and cook for another 2 minutes to heat through.
- Garnish with fresh chopped parsley if desired and serve warm.
Notes
- Use a cast-iron skillet for the best sear on the steak.
- You can substitute baby potatoes with russet or Yukon gold potatoes.
- Adjust seasoning to taste and add chili flakes for a spicy kick.
