- 1 cup corn kernels (fresh or frozen)

- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the sliced strawberries, diced avocado, corn kernels, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately, or refrigerate for up to 1 hour before serving.
Notes
- For extra crunch, you can add chopped cucumber or bell pepper.
- Feel free to swap fresh corn with canned or frozen corn, but be sure to drain and thaw frozen corn first.
