Instructions
- Prepare the Cookie Dough:
- Preheat your oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg yolk and vanilla extract, mixing until fully combined.
- Gradually add the flour and salt, mixing until the dough comes together. It will be soft but not sticky.
- Shape the Cookies:
- Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets.
- Use your thumb (or the back of a small spoon) to create an indentation in the center of each cookie.
- Bake the Cookies:
- Bake the cookies for 10โ12 minutes or until the edges are just beginning to turn golden. The centers may puff slightly but will settle as they cool.
- Remove the cookies from the oven and let them cool completely on a wire rack.
- Prepare the Filling:
- In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 15-second increments, stirring between each, until smooth and glossy.
- Spoon a small amount of melted chocolate into each cookie’s indentation, filling it halfway.
- Add the Strawberry Jam:
- Spoon a small amount of strawberry jam on top of the chocolate in each cookie’s center.
- Let the cookies set at room temperature, or refrigerate briefly to help the filling firm up.
- Serve and Enjoy:
- Once the filling has set, transfer the cookies to a serving platter and enjoy! Store leftovers in an airtight container at room temperature for up to 3 days.
