- 1/2 cup (100g) fresh strawberries, hulled and puréed
- 8 oz (227g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3–4 cups (360-480g) powdered sugar, sifted
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a small saucepan, simmer the strawberry purée over medium heat until reduced by half (about 1/4 cup). This intensifies the flavor. Let it cool completely.
- In a large mixing bowl, beat the softened cream cheese and butter together until smooth and fluffy.
- Add the cooled strawberry purée and vanilla extract to the cream cheese mixture. Beat until combined.
- Gradually add powdered sugar, 1 cup at a time, until the frosting reaches your desired sweetness and consistency.
- Add a pinch of salt to balance the flavors, and mix thoroughly.

- To make the frosting thicker, add more powdered sugar.
