Description

  • 1 pound fresh strawberries, hulled and halved
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tbsp strawberry gelatin (optional, for color and flavor)

Instructions

  1. In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. In a separate bowl, whip the heavy cream to stiff peaks, then fold it into the cream cheese mixture until fully combined.
  3. Spread the cream filling evenly into the graham cracker crust. Chill for at least 30 minutes.
  4. Meanwhile, combine water, granulated sugar, and cornstarch in a small saucepan over medium heat. Stir constantly until thickened and clear.
  5. Remove from heat and stir in strawberry gelatin, if using. Let cool slightly.
  6. Arrange halved strawberries on top of the chilled cream filling, cut side down.
