Description

These delicious, chewy matcha cookies are infused with a subtle green tea flavor and topped with a sweet, creamy strawberry frosting. The matcha gives the cookies a vibrant green color and an earthy flavor, while the strawberry frosting adds a fruity sweetness that makes them irresistible. Perfect for tea lovers or anyone who enjoys a unique twist on traditional cookies.

Ingredients

Units Scale

For the Cookies:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons matcha green tea powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Strawberry Frosting:

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 23 tablespoons strawberry puree (or 12 tablespoons freeze-dried strawberry powder)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, matcha powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a large bowl, using a mixer, beat the butter and sugar together until light and fluffy (about 2-3 minutes). Add in the egg and vanilla extract, mixing until combined.
  4. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Shape and Bake: Scoop tablespoon-sized balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are set but the center is still soft. Remove from the oven and let the cookies cool completely.
  6. Make the Strawberry Frosting: While the cookies are cooling, prepare the frosting. In a bowl, beat the softened butter until creamy. Gradually add powdered sugar and beat until smooth. Mix in the strawberry puree (or powder), vanilla, and a pinch of salt. Adjust the consistency with more powdered sugar or strawberry puree if needed.
  7. Frost the Cookies: Once the cookies have cooled, frost the tops of each cookie with the strawberry frosting. Let the frosting set for 15-20 minutes before serving.

Notes

  • You can adjust the matcha quantity to taste if you prefer a stronger or milder matcha flavor.
  • For the strawberry puree, simply blend fresh or frozen strawberries into a smooth consistency.
  • Store cookies in an airtight container at room temperature for up to 3 days.
