Strawberry oatmeal bars are a wholesome, fruity treat made with a buttery oat crust and a sweet strawberry filling. Perfect for breakfast, snack time, or a light dessert, these bars are easy to make and family-friendly.

- 1 1/2 cups old-fashioned rolled oats
- 1 1/4 cups all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/4 tsp salt
- 1/2 tsp baking soda
- 3/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 1/4 cups strawberry jam or preserves
- 1/2 cup fresh strawberries, chopped (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and set aside.
- In a large bowl, mix oats, flour, brown sugar, salt, and baking soda.
- Stir in melted butter and vanilla extract until the mixture is crumbly and evenly combined.
- Press about two-thirds of the mixture into the bottom of the prepared pan to form the crust.
- Spread strawberry jam evenly over the crust. If using, sprinkle chopped strawberries over the jam.
- Sprinkle the remaining oat mixture over the top and gently press down.
- Bake for 30–35 minutes or until the top is golden brown.
- Cool completely before slicing into bars.
Notes
- Substitute strawberry jam with any fruit preserve of your choice.
- For a healthier version, use coconut oil instead of butter and reduce sugar.
- Bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for longer freshness.
