Description

Strawberry oatmeal bars are a wholesome, fruity treat made with a buttery oat crust and a sweet strawberry filling. Perfect for breakfast, snack time, or a light dessert, these bars are easy to make and family-friendly.


Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/4 cups all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 1/4 cups strawberry jam or preserves
  • 1/2 cup fresh strawberries, chopped (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and set aside.
  2. In a large bowl, mix oats, flour, brown sugar, salt, and baking soda.
  3. Stir in melted butter and vanilla extract until the mixture is crumbly and evenly combined.
  4. Press about two-thirds of the mixture into the bottom of the prepared pan to form the crust.
  5. Spread strawberry jam evenly over the crust. If using, sprinkle chopped strawberries over the jam.
  6. Sprinkle the remaining oat mixture over the top and gently press down.
  7. Bake for 30–35 minutes or until the top is golden brown.
  8. Cool completely before slicing into bars.

Notes

  • Substitute strawberry jam with any fruit preserve of your choice.
  • For a healthier version, use coconut oil instead of butter and reduce sugar.
  • Bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for longer freshness.
