  • 16 large white mushrooms or cremini mushrooms, stems removed
  • 1/2 lb Italian sausage (mild or spicy)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup onion, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup breadcrumbs (Panko or regular)
  • 1 tbsp fresh parsley, chopped (plus more for garnish)
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional, for heat)
  • Salt & black pepper, to taste
  • 1/4 cup mozzarella cheese, shredded (for topping)
  • Cooking spray

Instructions

  1. Preheat ovenย toย 375ยฐF (190ยฐC). Lightly grease a baking sheet or line it with parchment paper.
  2. Prepare the mushrooms: Clean the mushrooms with a damp paper towel and remove the stems. Finely chop the stems and set aside.
  3. Cook the sausage: Heat 1 tbsp of olive oil in a skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove from pan and drain excess grease.
  4. Sautรฉ the aromatics: In the same skillet, add the remaining 1 tbsp of olive oil. Sautรฉ the chopped mushroom stems, onion, and garlic for 2-3 minutes until softened.
  5. Make the filling: In a bowl, combine the cooked sausage, sautรฉed mixture, cream cheese, Parmesan cheese, breadcrumbs, parsley, Italian seasoning, red pepper flakes, salt, and pepper. Mix well until creamy and evenly combined.
  6. Stuff the mushrooms: Spoon the filling into each mushroom cap, slightly mounding it. Place the stuffed mushrooms on the prepared baking sheet.
  7. Top & bake: Sprinkle each stuffed mushroom with mozzarella cheese. Bake forย 18-20 minutes, or until the mushrooms are tender and the tops are golden brown.
