- 16 large white mushrooms or cremini mushrooms, stems removed
- 1/2 lb Italian sausage (mild or spicy)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup onion, finely chopped
- 1/2 cup cream cheese, softened
- 1/4 cup Parmesan cheese, grated
- 1/4 cup breadcrumbs (Panko or regular)
- 1 tbsp fresh parsley, chopped (plus more for garnish)
- 1/2 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional, for heat)
- Salt & black pepper, to taste
- 1/4 cup mozzarella cheese, shredded (for topping)

Instructions
- Preheat ovenย toย 375ยฐF (190ยฐC). Lightly grease a baking sheet or line it with parchment paper.
- Prepare the mushrooms: Clean the mushrooms with a damp paper towel and remove the stems. Finely chop the stems and set aside.
- Cook the sausage: Heat 1 tbsp of olive oil in a skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove from pan and drain excess grease.
- Sautรฉ the aromatics: In the same skillet, add the remaining 1 tbsp of olive oil. Sautรฉ the chopped mushroom stems, onion, and garlic for 2-3 minutes until softened.
- Make the filling: In a bowl, combine the cooked sausage, sautรฉed mixture, cream cheese, Parmesan cheese, breadcrumbs, parsley, Italian seasoning, red pepper flakes, salt, and pepper. Mix well until creamy and evenly combined.
- Stuff the mushrooms: Spoon the filling into each mushroom cap, slightly mounding it. Place the stuffed mushrooms on the prepared baking sheet.
- Top & bake: Sprinkle each stuffed mushroom with mozzarella cheese. Bake forย 18-20 minutes, or until the mushrooms are tender and the tops are golden brown.
- Serve: Garnish with extra parsley and serve warm. Enjoy!
