Description

These super healthy nut and fruit granola bars are the perfect grab-and-go snack, packed with wholesome oats, nuts, seeds, and dried fruit. Naturally sweetened and vegan, they’re easy to make and customizable.


Ingredients

  • 2 cups rolled oats
  • 1/2 cup almonds, chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/2 cup dried cranberries
  • 1/4 cup raisins
  • 1/4 cup shredded coconut (optional)
  • 1/2 cup natural peanut butter or almond butter
  • 1/3 cup maple syrup or agave syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Line an 8×8 inch pan with parchment paper.
  2. In a large mixing bowl, combine oats, chopped almonds, walnuts, sunflower seeds, chia seeds, dried cranberries, raisins, and shredded coconut if using.
  3. In a small saucepan over low heat, warm the peanut butter and maple syrup until smooth and runny. Stir in vanilla extract and salt.
  4. Pour the wet mixture over the dry ingredients and mix well until everything is evenly coated.
  5. Transfer the mixture to the prepared pan and press down firmly using a spatula or the back of a spoon.
  6. Refrigerate for at least 2 hours to set.
  7. Once firm, lift out of the pan and slice into bars.

Notes

  • Store bars in an airtight container in the fridge for up to 1 week.
  • You can swap out the nuts and dried fruit for your favorites.
  • Add a handful of dark chocolate chips for a treat.
