Description

A delicious and healthy wrap made with roasted sweet potatoes, fresh vegetables, and a light dressing, all wrapped in a soft tortilla. Perfect for a nutritious lunch or dinner.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 4 whole wheat tortillas
  • 1 cup spinach or mixed greens
  • 1/2 cup avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup hummus (or your favorite spread)
  • 1/2 cup cherry tomatoes, halved
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the diced sweet potatoes with olive oil, cumin, paprika, garlic powder, salt, and pepper. Spread them out evenly on the prepared baking sheet.
  3. Roast the sweet potatoes in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through for even cooking.
  4. While the sweet potatoes are roasting, prepare the wraps. Warm the tortillas in a dry skillet or microwave for 20-30 seconds.
  5. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  6. To assemble the wraps, spread a thin layer of hummus on each tortilla. Add a handful of spinach or mixed greens, followed by a few slices of avocado, roasted sweet potatoes, red onion, cherry tomatoes, and cilantro if desired.
  7. Roll up the tortillas tightly, folding in the sides as you go. Slice the wraps in half and serve immediately.

Notes

  • If you prefer a spicier version, add a pinch of cayenne pepper or chili flakes to the roasted sweet potatoes.
  • You can make these wraps ahead of time and store them in the fridge for up to 1 day.
  • For a protein boost, add some grilled chicken, black beans, or quinoa to the wraps.
