Description

This irresistible mix combines Rice or Corn Chex cereal, assorted nuts, and pretzels, all coated in a rich, buttery toffee. The perfect balance of sweet and salty flavors makes it an addictive snack for parties, holidays, or everyday munching.


Ingredients

  • 12.8 oz box Rice or Corn Chex Cereal
  • 3 cups assorted nuts (pecans, almonds, peanuts, etc.)
  • 3 cups pretzel thins or mini knots
  • 1 cup unsalted butter
  • 2 cups dark brown sugar
  • 3/4 cup light corn syrup
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking soda

Instructions

  1. Prepare the Oven and Pans:
    • Place two racks near the center of the oven and preheat to 250ยฐF (120ยฐC).
    • Line two baking sheets with aluminum foil and spray generously with cooking spray.
  2. Mix Dry Ingredients:
    • In a very large mixing bowl, combine the entire box of cereal, assorted nuts, and pretzels. Set aside.
  3. Make the Toffee Coating:
    • In a large saucepan over medium heat, melt the butter.
    • Once melted, add the brown sugar, corn syrup, and salt. Stir frequently until the mixture comes to a boil.
    • Allow it to boil for 2 minutes, then remove from heat.
    • Carefully stir in the vanilla extract.
    • Add the baking soda and mix thoroughly. The toffee will foam and bubble; continue stirring until well combined.
  4. Combine and Bake:
    • Pour the hot toffee over the cereal mixture. Gently fold to coat the cereal, nuts, and pretzels evenly.
    • Divide the mixture between the two prepared baking sheets, spreading it out evenly.
    • Bake for 30โ€“55 minutes, stirring every 15 minutes. Bake for 30 minutes for a chewier texture or up to 55 minutes for a crispier finish.
  5. Cool and Serve:
    • Remove from the oven and continue stirring and separating the clumps until the mix is cool enough to stay separate.
    • Once fully cooled, transfer to a bowl and enjoy!
