For the Meatballs
- 1 lb (450g) ground chicken
- 1/4 cup breadcrumbs (or panko)
- 1 large egg
- 2 cloves garlic, minced
- 1/2 tsp ground ginger
- 2 green onions, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
For the Sweet & Spicy Sauce
- 1/4 cup soy sauce
- 3 tbsp honey
- 1 tbsp rice vinegar
- 2 tsp sriracha (adjust to taste)
- 1 tbsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
For Serving
- Cooked rice or noodles
- Sliced cucumbers
- Shredded carrots
- Chopped green onions
- Sesame seeds
Instructions
- Make the Meatballs:
- Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, and sesame oil. Mix until just combined.
- Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake for 18โ20 minutes, or until cooked through.
- Prepare the Sauce:
- In a small saucepan, combine soy sauce, honey, rice vinegar, sriracha, and sesame oil. Heat over medium heat until the mixture starts to simmer.
- Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens. Remove from heat.
- Assemble the Bowls:
- Toss the cooked meatballs in the sweet and spicy sesame sauce until fully coated.
- Divide the rice or noodles between bowls. Top with sauced meatballs, sliced cucumbers, shredded carrots, and chopped green onions.
- Sprinkle sesame seeds over the top for garnish.
Notes
- Adjust the spice level by adding more or less sriracha.
- For a low-carb option, serve the meatballs over cauliflower rice or zucchini noodles.
- You can make the meatballs ahead of time and freeze them for up to 3 months.
