Description

These Sweet & Spicy Sesame Chicken Meatball Bowls are packed with flavor and perfect for a quick, healthy dinner. Juicy chicken meatballs coated in a sweet and tangy sesame sauce are served over rice or noodles and topped with crunchy veggies for a satisfying meal the whole family will love.

For the Meatballs

  • 1 lb (450g) ground chicken
  • 1/4 cup breadcrumbs (or panko)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 tsp ground ginger
  • 2 green onions, finely chopped
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

For the Sweet & Spicy Sauce

  • 1/4 cup soy sauce
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 2 tsp sriracha (adjust to taste)
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

For Serving

  • Cooked rice or noodles
  • Sliced cucumbers
  • Shredded carrots
  • Chopped green onions
  • Sesame seeds

Instructions

  1. Make the Meatballs:
    • Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
    • In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, and sesame oil. Mix until just combined.
    • Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
    • Bake for 18โ€“20 minutes, or until cooked through.
  2. Prepare the Sauce:
    • In a small saucepan, combine soy sauce, honey, rice vinegar, sriracha, and sesame oil. Heat over medium heat until the mixture starts to simmer.
    • Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens. Remove from heat.
  3. Assemble the Bowls:
    • Toss the cooked meatballs in the sweet and spicy sesame sauce until fully coated.
    • Divide the rice or noodles between bowls. Top with sauced meatballs, sliced cucumbers, shredded carrots, and chopped green onions.
    • Sprinkle sesame seeds over the top for garnish.

Notes

  • Adjust the spice level by adding more or less sriracha.
  • For a low-carb option, serve the meatballs over cauliflower rice or zucchini noodles.
  • You can make the meatballs ahead of time and freeze them for up to 3 months.
