  • 1 lb ground beef (85% lean or higher)
  • 1 lb ground pork (or ground turkey for a lighter option)
  • 1 cup crushed tortilla chips or breadcrumbs
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa (mild, medium, or hot based on preference)
  • 1 packet taco seasoning (or 2 tbsp homemade taco spice mix)
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 small onion, finely chopped
  • 1/2 cup milk
  • 1/4 tsp salt (optional, adjust based on taco seasoning)

For the topping:

  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese

Instructions

  • Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a loaf pan or line it with parchment paper.
  • In a large mixing bowl, combine the ground beef, ground pork, tortilla chips, egg, cheddar cheese, salsa, taco seasoning, cilantro, onion, milk, and salt. Mix until just combined, but avoid overmixing to keep the meatloaf tender.
  • Shape the mixture into a loaf and place it in the prepared pan.
  • Spread the 1/2 cup of salsa evenly over the top of the meatloaf.
  • Bake in the preheated oven for 45 minutes.
  • Remove the meatloaf, sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Allow the meatloaf to rest for 10 minutes before slicing. Garnish with extra cilantro if desired and serve warm.

  • For added spice, mix diced jalapeรฑos into the meat mixture.
