These Taco Stuffed Peppers are a delicious and healthy twist on classic tacos! Sweet bell peppers are stuffed with a savory ground beef and taco seasoning mixture, then topped with melted cheese. Perfect for a weeknight dinner that the whole family will love.

- 4 large bell peppers (any color)
- 1 pound ground beef (or ground turkey for a lighter option)
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1 cup cooked rice (white, brown, or cauliflower rice for a low-carb option)
- 1 cup black beans, drained and rinsed (optional)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup salsa
- 1 cup shredded cheese (cheddar, Mexican blend, or Monterey Jack)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, chopped cilantro, diced avocado, or hot sauce
Instructions
- Preheat your oven to 375ยฐF (190ยฐC).
- Slice the tops off the bell peppers and remove the seeds and membranes. Rub the insides and outsides with olive oil and place them in a baking dish, cut side up.
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles. Drain any excess grease.
- Add the taco seasoning to the skillet with 1/4 cup water. Stir and let it simmer for 2-3 minutes until thickened.
- Stir in the cooked rice, black beans (if using), corn, and salsa. Mix well and cook for another 2 minutes. Taste and adjust seasoning with salt and pepper.
- Spoon the beef mixture evenly into each prepared bell pepper.
- Sprinkle shredded cheese over the top of each stuffed pepper.
- Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender. Remove the foil and bake for an additional 5 minutes to melt and brown the cheese.
- Remove from the oven and let cool slightly. Add optional toppings as desired and serve warm.
Notes
- For a vegetarian version, substitute ground beef with cooked quinoa or crumbled tofu.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
