Description

These Taco Stuffed Peppers are a delicious and healthy twist on classic tacos! Sweet bell peppers are stuffed with a savory ground beef and taco seasoning mixture, then topped with melted cheese. Perfect for a weeknight dinner that the whole family will love.


Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef (or ground turkey for a lighter option)
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1 cup cooked rice (white, brown, or cauliflower rice for a low-carb option)
  • 1 cup black beans, drained and rinsed (optional)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar, Mexican blend, or Monterey Jack)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, diced avocado, or hot sauce

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Rub the insides and outsides with olive oil and place them in a baking dish, cut side up.
  3. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles. Drain any excess grease.
  4. Add the taco seasoning to the skillet with 1/4 cup water. Stir and let it simmer for 2-3 minutes until thickened.
  5. Stir in the cooked rice, black beans (if using), corn, and salsa. Mix well and cook for another 2 minutes. Taste and adjust seasoning with salt and pepper.
  6. Spoon the beef mixture evenly into each prepared bell pepper.
  7. Sprinkle shredded cheese over the top of each stuffed pepper.
  8. Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender. Remove the foil and bake for an additional 5 minutes to melt and brown the cheese.
  9. Remove from the oven and let cool slightly. Add optional toppings as desired and serve warm.

Notes

  • For a vegetarian version, substitute ground beef with cooked quinoa or crumbled tofu.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
