Ingredients
-
1 lb ground beef
-
1 small onion, diced
-
1 (10.5 oz) can cream of mushroom soup
-
1 (10.5 oz) can cream of chicken soup (optional, for extra creaminess)
-
1 cup frozen mixed vegetables (peas, carrots, corn, or green beans)
-
2 cups shredded cheddar cheese (optional but recommended)
-
1 (32 oz) bag frozen tater tots
-
Salt and pepper to taste
-
Cooking spray or butter (for greasing the pan)
Instructions
-
Preheat your oven to 375°F (190°C).
-
In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft. Season with salt and pepper. Drain excess grease.
-
Stir in the cream of mushroom soup (and cream of chicken soup, if using), and the frozen mixed vegetables. Mix until everything is well combined.
-
Spread the meat mixture evenly in a greased 9×13-inch baking dish.
-
Sprinkle shredded cheddar cheese over the top (if using).
-
Arrange tater tots in a single layer on top of the cheese or meat mixture.
-
Bake for 40–45 minutes, or until the tater tots are golden brown and crispy.
-
Let it cool for a few minutes before serving.
Notes
-
You can swap the cream of mushroom soup for cream of celery if you prefer.
-
For a bit of a kick, add a dash of hot sauce or some crushed red pepper flakes to the meat mixture.
-
Leftovers store well in the fridge for up to 4 days.
