Description

  • Cream Cheese Frosting:
  • 16 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In a large bowl, whisk together oil, buttermilk, eggs, food coloring, vinegar, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until smooth and combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. To make the frosting, beat cream cheese and butter together until smooth and fluffy. Gradually add powdered sugar and vanilla, beating until light and creamy.
  8. Once cakes are completely cool, spread frosting between the layers and over the top and sides of the cake.
