Description

This refreshing Summer Rotisserie Chicken Salad is the perfect light meal for hot days. Made with juicy rotisserie chicken, crisp vegetables, and a zesty dressing, itโ€™s quick to prepare and packed with vibrant flavors. Perfect for picnics, potlucks, or a simple family lunch!

Ingredients

Units Scale
  • 3 cups rotisserie chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup sliced almonds, toasted
  • 4 cups mixed greens or baby spinach

For the Dressing:

  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded rotisserie chicken, cherry tomatoes, cucumber, red onion, avocado, basil, feta cheese (if using), and toasted almonds.
  2. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, honey, salt, and pepper until well combined.
  3. Drizzle the dressing over the chicken and vegetable mixture. Toss gently to coat all ingredients evenly.
  4. Serve the salad over a bed of mixed greens or baby spinach.
  5. Garnish with extra basil or feta if desired. Enjoy chilled or at room temperature.

Notes

  • Substitute feta with goat cheese for a creamier texture.
  • Add grilled corn or diced mango for extra summer flair.
  • For a low-carb option, skip the mixed greens and serve in lettuce wraps.
