Ingredients

2 slices whole grain or sourdough bread

1 ripe avocado

1 medium tomato, sliced

2-3 lettuce leaves (romaine, green leaf, or your choice)

1 tablespoon mayonnaise or hummus (optional)

Salt and black pepper, to taste

A squeeze of lemon juice (optional)

Olive oil or butter (for toasting, optional)
Instructions
Toast the bread slices until golden brown, if desired.
In a small bowl, mash the avocado with a fork. Add a pinch of salt, pepper, and a squeeze of lemon juice if using.
Spread mayo or hummus on one or both slices of bread (optional).
Layer lettuce leaves on one slice, then add tomato slices.
Spread the mashed avocado on top of the tomatoes.
Top with the second slice of bread, slice in half, and enjoy!
