Description

A refreshing and flavorful salad featuring artichokes, tomatoes, and Tuscan-inspired ingredients like olives and basil, dressed with olive oil and balsamic vinegar.


Ingredients

  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 2 cups cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. In a large mixing bowl, combine the chopped artichokes, halved cherry tomatoes, olives, red onion, and basil.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, black pepper, and red pepper flakes (if using).
  3. Pour the dressing over the salad and toss gently to combine all ingredients.
  4. Serve immediately, or refrigerate for 30 minutes to allow the flavors to meld.
