Twice Baked Potato Bites are a delicious, bite-sized appetizer made with creamy mashed potatoes, cheese, and crispy potato skins—perfect for parties or game day snacks.

- 12 small red or baby potatoes
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked and crumbled bacon
- 2 tablespoons chopped chives or green onions
- 2 tablespoons butter
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Scrub the potatoes clean and pierce each with a fork. Place them on the baking sheet and bake for 30-35 minutes or until tender.
- Let the potatoes cool slightly, then slice each in half and scoop out most of the inside, leaving a small border of potato in the skin.
- Place the scooped potato flesh in a bowl and mash with sour cream, butter, cheddar cheese, bacon, salt, and pepper until smooth.
- Spoon the filling back into the potato skins, mounding slightly.
- Place the stuffed potatoes back on the baking sheet and bake for another 10-15 minutes until golden and heated through.
- Garnish with chopped chives or green onions before serving.
Notes
- Use baby Yukon Golds for a creamier texture.
- Can be made ahead and reheated before serving.
- Add a pinch of garlic powder or paprika for extra flavor.
