Description

Twice Baked Potato Bites are a delicious, bite-sized appetizer made with creamy mashed potatoes, cheese, and crispy potato skins—perfect for parties or game day snacks.


Ingredients

  • 12 small red or baby potatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon
  • 2 tablespoons chopped chives or green onions
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Scrub the potatoes clean and pierce each with a fork. Place them on the baking sheet and bake for 30-35 minutes or until tender.
  3. Let the potatoes cool slightly, then slice each in half and scoop out most of the inside, leaving a small border of potato in the skin.
  4. Place the scooped potato flesh in a bowl and mash with sour cream, butter, cheddar cheese, bacon, salt, and pepper until smooth.
  5. Spoon the filling back into the potato skins, mounding slightly.
  6. Place the stuffed potatoes back on the baking sheet and bake for another 10-15 minutes until golden and heated through.
  7. Garnish with chopped chives or green onions before serving.

Notes

  • Use baby Yukon Golds for a creamier texture.
  • Can be made ahead and reheated before serving.
  • Add a pinch of garlic powder or paprika for extra flavor.
