Description

This deep-dish cookie pie is loaded with festive Valentine’s Day M&M’s and heart-shaped peanut butter cups, making it a sweet treat for the special day.


Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 1 large egg plus 2 egg yolks, at room temperature
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 2 cups Valentine’s Day M&M’s (regular M&M’s will also work)
  • 3/4 cup mini heart-shaped peanut butter cups, chopped (regular mini peanut butter cups can be used)

Instructions

  • Preheat your oven to 350°F (175°C). Lightly spray a 9-inch pie plate with non-stick baking spray and set aside.
  • In a large bowl, combine the melted butter, brown sugar, and granulated sugar; mix well until combined.
  • Beat in the egg, egg yolks, and vanilla extract until smooth.
  • Add the flour, cornstarch, and salt to the wet ingredients and mix until just combined. Avoid overmixing.
  • Fold in the M&M’s and chopped peanut butter cups.
  • Spread the batter evenly into the prepared pie plate. For a festive touch, you can sprinkle additional M&M’s and peanut butter cups on top.
  • Bake for 38 to 40 minutes, or until the top is golden brown, the edges are set, and the center is slightly jiggly. If the top begins to brown too quickly, cover it loosely with aluminum foil.
  • Remove from the oven and place the pie on a wire rack to cool for at least one hour before slicing and serving.

Notes

  • For an extra decadent dessert, serve warm slices with a scoop of vanilla ice cream on top.
  • Ensure the eggs are at room temperature to help the batter mix more evenly.
  • If you can’t find heart-shaped peanut butter cups, regular mini peanut butter cups or chocolate chips can be substituted.
