Instructions

  1. Prepare the dough: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. Mix the wet ingredients: In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes. Add the egg, vanilla extract, and almond extract (if using), and mix until well combined.
  3. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be slightly sticky but firm.
  4. Chill the dough: Divide the dough into two portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
