Pastry:

- 2 tablespoons non-dairy milk (for brushing)
Filling:
- 1/4 cup fruit preserves or jam of your choice (strawberry, raspberry, or apricot work great)
- 1 teaspoon cornstarch (optional, for thicker filling)
Decoration:
- Powdered sugar (for dusting)
- Vegan-friendly red or pink sprinkles (optional)
Instructions
- Preheat the Oven:
Preheat your oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper. - Prepare the Puff Pastry:
Roll out the vegan puff pastry on a lightly floured surface. Cut it into 4-inch squares. - Add the Filling:
Place 1 teaspoon of fruit preserves in the center of each square. If using cornstarch, mix it into the jam first for a thicker filling. - Fold Into Love Letters:
Fold two opposite corners of each square toward the center, slightly overlapping, to form an envelope shape. Press gently to seal. - Brush and Bake:
Lightly brush the tops of the pastries with non-dairy milk for a golden finish. Bake for 15โ18 minutes or until golden and puffed. - Cool and Decorate:
Let the pastries cool for 5โ10 minutes. Dust with powdered sugar and add sprinkles if desired.
