  • 1 teaspoon cornstarch (optional, for thicker filling)

Decoration:

  • Powdered sugar (for dusting)
  • Vegan-friendly red or pink sprinkles (optional)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper.
  2. Prepare the Puff Pastry:
    Roll out the vegan puff pastry on a lightly floured surface. Cut it into 4-inch squares.
  3. Add the Filling:
    Place 1 teaspoon of fruit preserves in the center of each square. If using cornstarch, mix it into the jam first for a thicker filling.
  4. Fold Into Love Letters:
    Fold two opposite corners of each square toward the center, slightly overlapping, to form an envelope shape. Press gently to seal.
  5. Brush and Bake:
    Lightly brush the tops of the pastries with non-dairy milk for a golden finish. Bake for 15โ€“18 minutes or until golden and puffed.
  6. Cool and Decorate:
    Let the pastries cool for 5โ€“10 minutes. Dust with powdered sugar and add sprinkles if desired.

  • You can substitute the fruit preserves with chocolate spread or nut butter for a different twist.
