For the Dip
- 1 cup (about 225g) cottage cheese (preferably full-fat for extra creaminess)
- 1 tablespoon fresh lemon juice
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
For Garnish
- 1 tablespoon fresh chives, finely chopped
- 1 tablespoon fresh dill, finely chopped
- Extra olive oil, for drizzling
- Crushed red pepper flakes (optional)
For Serving
- Assorted fresh vegetables (carrot sticks, cucumber slices, bell pepper strips, etc.)
- Pita chips or toasted bread slices
Instructions
- Blend the Base – Place the cottage cheese, lemon juice, minced garlic, olive oil, salt, and black pepper in a food processor or high-speed blender. Process for 1-2 minutes, scraping down the sides as needed, until the mixture is ultra-smooth and creamy.
- Season and Taste – Stop and taste the dip. Adjust salt, pepper, or lemon juice to your preference. If you like it tangier, add a touch more lemon.
- Scoop and Garnish – Transfer the whipped cottage cheese dip to a serving bowl. Smooth the top with a spoon, then sprinkle with chopped chives, dill, and a pinch of red pepper flakes if using. Drizzle with a bit of extra olive oil.
- Serve – Serve immediately with fresh vegetables, pita chips, or toasted bread. Enjoy as a quick snack or crowd-pleasing appetizer.
Notes
- Full-fat cottage cheese gives the richest texture, but you can use low-fat for a lighter dip.
- This dip keeps well in the fridge for up to 3 days; stir before serving if it separates.
- Add a handful of fresh basil or parsley for more herby flavor, or swirl in a spoonful of pesto for a twist.
- For extra tang, add a splash of white wine vinegar or use roasted garlic instead of raw.
