  • 2 cups pomegranate seeds
  • 2 large oranges, peeled and segmented
  • 2 apples, cored and diced
  • 2 pears, cored and diced
  • 1 cup red grapes, halved
  • 1 cup green grapes, halved
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey or maple syrup (adjust to taste)
  • 1/2 tsp ground cinnamon (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a large mixing bowl, combine the pomegranate seeds, orange segments, diced apples, diced pears, and halved grapes.
  2. In a small bowl, whisk together the lemon juice, honey (or maple syrup), and cinnamon until well combined.
  3. Pour the dressing over the fruit and gently toss to coat all the pieces evenly.
  4. Add the dried cranberries and chopped nuts if using, and toss lightly again.
  5. Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld.
  6. Garnish with fresh mint leaves just before serving.

Notes

  • To prevent the apples and pears from browning, toss them with a little lemon juice before adding them to the salad.
