- 2 cups pomegranate seeds
- 2 large oranges, peeled and segmented
- 2 apples, cored and diced
- 2 pears, cored and diced
- 1 cup red grapes, halved
- 1 cup green grapes, halved
- 1/4 cup dried cranberries
- 1/4 cup chopped pecans or walnuts (optional)
- 2 tbsp fresh lemon juice
- 1 tbsp honey or maple syrup (adjust to taste)
- 1/2 tsp ground cinnamon (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a large mixing bowl, combine the pomegranate seeds, orange segments, diced apples, diced pears, and halved grapes.
- In a small bowl, whisk together the lemon juice, honey (or maple syrup), and cinnamon until well combined.
- Pour the dressing over the fruit and gently toss to coat all the pieces evenly.
- Add the dried cranberries and chopped nuts if using, and toss lightly again.
- Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld.
- Garnish with fresh mint leaves just before serving.
Notes
- To prevent the apples and pears from browning, toss them with a little lemon juice before adding them to the salad.
