- 1 yellow bell pepper, cut into strips
- 1 zucchini, sliced into rounds
- 1 yellow squash, sliced into rounds
- 1 red onion, cut into wedges
- 8 oz mushrooms, halved
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and black pepper.
- Add the prepared vegetables to the bowl and toss to coat evenly. Let marinate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Thread vegetables onto skewers or use a grill basket for easier handling.
- Grill vegetables for 10–15 minutes, turning occasionally, until tender and nicely charred.
- Remove from grill and serve warm or at room temperature.
