For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
For the Filling:
- 1 tablespoon butter
- 1 cup mushrooms, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme (or fresh)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
For the Garlic Butter Sauce:
- 3 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon lemon juice (optional)
Instructions
- Prepare the Chicken:
- Preheat oven toย 375ยฐF (190ยฐC).
- Slice aย pocketย into the side of each chicken breast, being careful not to cut all the way through.
- Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Make the Filling:
- Heat 1 tablespoon butter in a pan overย medium heat.
- Add the mushrooms and cook for aboutย 4-5 minutes, until softened.
- Stir in the garlic, salt, pepper, and thyme, and cook for anotherย 1-2 minutes. Remove from heat.
- Once slightly cooled, mix in mozzarella and Parmesan cheese.
- Stuff the Chicken:
- Spoon the mushroom-cheese mixture into each chicken breast pocket. Secure with toothpicks if needed.
- Sear the Chicken:
- Heatย 2 tablespoons olive oilย in a large oven-safe skillet overย medium-high heat.
- Sear the chicken forย 2-3 minutes per side, until golden brown.
- Bake:
- Transfer skillet to the preheated oven and bake forย 15-20 minutes, or until chicken reaches anย internal temperature of 165ยฐF (74ยฐC).
- Make the Garlic Butter Sauce:
- While chicken is baking, meltย 3 tablespoons butterย in a small pan.
- Add garlic and cook forย 30 seconds, then remove from heat and stir in parsley and lemon juice.

- Remove toothpicks (if used) and serve warm.
