  • 2 tablespoons olive oil

For the Filling:

  • 1 tablespoon butter
  • 1 cup mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme (or fresh)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

For the Garlic Butter Sauce:

  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Prepare the Chicken:
    • Preheat oven toย 375ยฐF (190ยฐC).
    • Slice aย pocketย into the side of each chicken breast, being careful not to cut all the way through.
    • Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Make the Filling:
    • Heat 1 tablespoon butter in a pan overย medium heat.
    • Add the mushrooms and cook for aboutย 4-5 minutes, until softened.
    • Stir in the garlic, salt, pepper, and thyme, and cook for anotherย 1-2 minutes. Remove from heat.
    • Once slightly cooled, mix in mozzarella and Parmesan cheese.
  3. Stuff the Chicken:
    • Spoon the mushroom-cheese mixture into each chicken breast pocket. Secure with toothpicks if needed.
  4. Sear the Chicken:
    • Heatย 2 tablespoons olive oilย in a large oven-safe skillet overย medium-high heat.
    • Sear the chicken forย 2-3 minutes per side, until golden brown.
  5. Bake:
