  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup milk
  • 2 cups uncooked elbow macaroni
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1/2 cup ketchup
  • 1/4 cup yellow mustard
  • 2 cups shredded cheddar cheese
  • 1/4 cup cream cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if necessary.
  2. Add onion and garlic to the skillet. Cook until softened, about 2-3 minutes.
  3. Stir in beef broth, milk, uncooked macaroni, diced tomatoes, ketchup, and mustard. Mix well.
  4. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender.
  5. Reduce heat to low. Stir in cheddar cheese and cream cheese until melted and the sauce is creamy.
