- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup milk
- 2 cups uncooked elbow macaroni
- 1 (14.5 oz) can diced tomatoes, drained
- 1/2 cup ketchup
- 1/4 cup yellow mustard
- 2 cups shredded cheddar cheese
- 1/4 cup cream cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if necessary.
- Add onion and garlic to the skillet. Cook until softened, about 2-3 minutes.
- Stir in beef broth, milk, uncooked macaroni, diced tomatoes, ketchup, and mustard. Mix well.
- Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender.
- Reduce heat to low. Stir in cheddar cheese and cream cheese until melted and the sauce is creamy.
- Season with salt and pepper to taste.
- Garnish with parsley, if desired, and serve hot.
