For the Garlic Parmesan Topping:

  • 2 tablespoons melted butter
  • 1 clove garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat & Prep:
    Preheat your oven toย 375ยฐF (190ยฐC). Lightly grease a baking sheet or line it with parchment paper.
  2. Mix the Meatloaf Ingredients:
    In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, minced garlic, Italian seasoning, salt, black pepper, red pepper flakes (if using), and milk. Mix until just combinedโ€”avoid overmixing to keep the meatloaves tender.
  3. Shape the Meatloaves:
    Divide the mixture intoย four equal portionsย and shape them into small, oval loaves. Place them on the prepared baking sheet.
  4. Bake the Meatloaves:
    Bake forย 18-20 minutes, or until they reach an internal temperature ofย 165ยฐF (75ยฐC).
  5. Prepare the Topping:
