For the Stir Fry:
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1 small onion, diced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 medium zucchini, sliced
- 1/2 cup shredded carrots
- 2 green onions, chopped (for garnish)
- 1 tablespoon sesame seeds (for garnish)
For the Teriyaki Sauce:
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey (or brown sugar)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional, for spice)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken)
Instructions
- Cook the Turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Sautรฉ Aromatics: Push the turkey to one side of the pan. Add sesame oil, garlic, ginger, and onion. Cook for 1-2 minutes until fragrant.
- Add Vegetables: Stir in the bell pepper, broccoli, zucchini, and carrots. Cook for 4-5 minutes, stirring frequently, until the veggies are slightly tender but still crisp.
- Make the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Stir in the cornstarch slurry.
- Combine & Simmer: Pour the teriyaki sauce over the turkey and vegetables. Stir well and let it simmer for 2-3 minutes until the sauce thickens.
- Serve: Remove from heat and garnish with green onions and sesame seeds. Serve over rice, quinoa, or noodles. Enjoy!
