  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium zucchini, sliced
  • 1/2 cup shredded carrots
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

For the Teriyaki Sauce:

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey (or brown sugar)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional, for spice)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken)

Instructions

  1. Cook the Turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  2. Sautรฉ Aromatics: Push the turkey to one side of the pan. Add sesame oil, garlic, ginger, and onion. Cook for 1-2 minutes until fragrant.
  3. Add Vegetables: Stir in the bell pepper, broccoli, zucchini, and carrots. Cook for 4-5 minutes, stirring frequently, until the veggies are slightly tender but still crisp.
  4. Make the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Stir in the cornstarch slurry.
  5. Combine & Simmer: Pour the teriyaki sauce over the turkey and vegetables. Stir well and let it simmer for 2-3 minutes until the sauce thickens.
