Ingredients

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups mini marshmallows

Instructions

  1. Pop the Popcornย โ€“ Pop the kernels using an air popper or stovetop method. Remove any unpopped kernels and place the popcorn in a large mixing bowl.
  2. Make the Caramelย โ€“ In a saucepan over medium heat, melt the butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil and cook for 2 minutes, stirring constantly.
  3. Add Marshmallowsย โ€“ Reduce the heat to low and add the marshmallows. Stir until fully melted and smooth.
  4. Coat the Popcornย โ€“ Pour the warm caramel-marshmallow mixture over the popcorn. Gently stir with a spatula until all the popcorn is evenly coated.
