- 10 cups popped popcorn (about 1/2 cup unpopped kernels)
- 1/2 cup unsalted butter
- 1 cup brown sugar, packed
- 1/4 cup light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
Instructions
- Pop the Popcornย โ Pop the kernels using an air popper or stovetop method. Remove any unpopped kernels and place the popcorn in a large mixing bowl.
- Make the Caramelย โ In a saucepan over medium heat, melt the butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil and cook for 2 minutes, stirring constantly.
- Add Marshmallowsย โ Reduce the heat to low and add the marshmallows. Stir until fully melted and smooth.
- Coat the Popcornย โ Pour the warm caramel-marshmallow mixture over the popcorn. Gently stir with a spatula until all the popcorn is evenly coated.
- Let it Setย โ Spread the coated popcorn onto a lined baking sheet and let it cool for about 15 minutes.
- Break Apart & Enjoyย โ Once cooled, break into pieces and serve!

- Make it Crunchyย โ If you prefer a crunchier caramel corn, bake it atย 250ยฐF (120ยฐC) for 15-20 minutes, stirring halfway through.
