Cookies:
- 2 1/4 cups (280g) all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/2 cup (110g) light brown sugar, packed
- 1 large egg
- 1/4 cup (60ml) eggnog
- 1 tsp vanilla extract
Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tbsp eggnog
- 1/4 tsp ground nutmeg (for garnish)
Instructions
- Prepare the Dough:
Preheat your oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper or silicone mats.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and nutmeg. Set aside. - Cream the Butter and Sugars:
In a large bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). - Mix Wet Ingredients:
Beat in the egg, eggnog, and vanilla extract until well combined. - Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing. - Shape the Cookies:
Scoop out dough using a tablespoon or small cookie scoop, and roll into balls. Place the dough balls about 2 inches apart on the prepared baking sheets. - Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly puffed. Do not overbake. Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely. - Prepare the Glaze:
In a small bowl, whisk together powdered sugar and eggnog until smooth. Adjust the consistency by adding more powdered sugar or eggnog as needed. - Decorate:
Drizzle or spread the glaze over the cooled cookies. Sprinkle a light dusting of nutmeg on top for garnish.
Notes
- For extra flavor, add a pinch of cinnamon to the glaze.
- Store cookies in an airtight container at room temperature for up to 5 days.
- If you prefer crispier edges, bake for an additional 1-2 minutes.
