  • 2/3 cup warm heavy cream

  • 2 tablespoons unsalted butter, at room temperature
  • 1 large egg, at room temperature

For the Garlic Butter:

  • 1 stick (8 tablespoons) unsalted butter, at room temperature
  • 23 cloves garlic, grated (adjust to taste)
  • 1/3 cup freshly grated Parmesan cheese
  • 2 tablespoons dried parsley
  • 1 tablespoon chopped fresh sage or oregano

For Topping:

  • Flaky sea salt
  • Fresh thyme (optional)

Instructions

  1. Prepare the Dough:
    • In the bowl of a stand mixer, combine 4ยพ cups flour, 2 packets instant yeast, and 1 teaspoon kosher salt.

    • Using the dough hook attachment, mix until the flour is fully incorporated, about 4-5 minutes. If the dough is sticky, add a bit more flour.
  2. First Rise:
    • Cover the bowl with plastic wrap and let the dough sit at room temperature for 30 minutes to 1 hour, until it has risen.
  3. Prepare the Garlic Butter:
    • In a small bowl, combine 1 stick (8 tablespoons) unsalted butter, 2-3 grated garlic cloves, โ…“ cup grated Parmesan cheese, 2 tablespoons dried parsley, and 1 tablespoon chopped fresh sage or oregano. Mix well.
  4. Shape the Dough:
    • Transfer the risen dough to a lightly floured surface and divide it into 4 equal pieces.
    • Roll each piece into a large rectangle (about 14×10 inches).
    • Spread a quarter of the garlic butter over each rectangle.
    • Cut each rectangle lengthwise into 3 strips, then cut each strip into 4 squares, making 12 squares per rectangle.
    • Stack the squares on top of each other to form small stacks.
  5. Assemble the Wreath:
    • Arrange the stacks upright in a lightly buttered tube or bundt pan, forming a circle. Leave small gaps between the stacks to allow for expansion.
  6. Second Rise:
    • Cover the pan with plastic wrap and let the dough rise in a warm place for about 1 hour, until it nearly reaches the top of the pan.
  7. Bake:
    • Preheat the oven to 350ยฐF (175ยฐC).
    • Bake the bread for 30 to 40 minutes, until golden brown.
    • Let it cool in the pan for 5 minutes, then carefully remove the bread from the pan.
  8. Serve:
    • Brush the warm bread with any remaining garlic butter.
    • Sprinkle with flaky sea salt and fresh thyme, if desired.
    • Serve warm, allowing guests to pull apart pieces from the wreath.
