Instructions
- Prepare the Dough:
- In the bowl of a stand mixer, combine 4ยพ cups flour, 2 packets instant yeast, and 1 teaspoon kosher salt.
- Add 1 cup warm whole milk, โ cup warm heavy cream, 3 tablespoons honey, 2 tablespoons unsalted butter, and 1 large egg.
- Using the dough hook attachment, mix until the flour is fully incorporated, about 4-5 minutes. If the dough is sticky, add a bit more flour.
- First Rise:
- Cover the bowl with plastic wrap and let the dough sit at room temperature for 30 minutes to 1 hour, until it has risen.
- Prepare the Garlic Butter:
- In a small bowl, combine 1 stick (8 tablespoons) unsalted butter, 2-3 grated garlic cloves, โ cup grated Parmesan cheese, 2 tablespoons dried parsley, and 1 tablespoon chopped fresh sage or oregano. Mix well.
- Shape the Dough:
- Transfer the risen dough to a lightly floured surface and divide it into 4 equal pieces.
- Roll each piece into a large rectangle (about 14×10 inches).
- Spread a quarter of the garlic butter over each rectangle.
- Cut each rectangle lengthwise into 3 strips, then cut each strip into 4 squares, making 12 squares per rectangle.
- Stack the squares on top of each other to form small stacks.
- Assemble the Wreath:
- Arrange the stacks upright in a lightly buttered tube or bundt pan, forming a circle. Leave small gaps between the stacks to allow for expansion.
- Second Rise:
- Cover the pan with plastic wrap and let the dough rise in a warm place for about 1 hour, until it nearly reaches the top of the pan.
- Bake:
- Preheat the oven to 350ยฐF (175ยฐC).
- Bake the bread for 30 to 40 minutes, until golden brown.
- Let it cool in the pan for 5 minutes, then carefully remove the bread from the pan.
- Serve:
- Brush the warm bread with any remaining garlic butter.
- Sprinkle with flaky sea salt and fresh thyme, if desired.
- Serve warm, allowing guests to pull apart pieces from the wreath.
Notes
- For a cheesier version, consider adding small cubes of mozzarella between the dough layers.
