Instructions

  1. Prepare the Simple Syrup:
    • In a medium saucepan over medium heat, combine the water and 3/4 cup (150g) of sugar. Stir until the sugar has completely dissolved, creating a simple syrup.
  2. Coat the Cranberries:
    • Place the fresh cranberries in a large heatproof bowl. Pour the warm simple syrup over the cranberries, ensuring they are fully submerged.
    • Let the cranberries soak in the syrup for about 15 minutes. This allows them to absorb the sweetness.
  3. Dry the Cranberries:
    • Using a slotted spoon, transfer the cranberries to a wire rack set over a baking sheet lined with parchment paper. Spread them out in a single layer, ensuring they are not touching.
    • Allow the cranberries to dry at room temperature for about 1 hour. They will become sticky as they dry.
  4. Sugar the Cranberries:
    • Place the remaining 1/2 cup (100g) of sugar in a shallow bowl. Working in small batches, roll the sticky cranberries in the sugar until they are well coated, giving them a frosted appearance.
    • Once coated, place the sugared cranberries back on the wire rack to dry for an additional hour.
