- 1 cup (100g) fresh cranberries (do not use frozen)
- 3/4 cup (180ml) water
- 1 1/4 cups (250g) granulated sugar, divided
Instructions
- Prepare the Simple Syrup:
- In a medium saucepan over medium heat, combine the water and 3/4 cup (150g) of sugar. Stir until the sugar has completely dissolved, creating a simple syrup.
- Coat the Cranberries:
- Place the fresh cranberries in a large heatproof bowl. Pour the warm simple syrup over the cranberries, ensuring they are fully submerged.
- Let the cranberries soak in the syrup for about 15 minutes. This allows them to absorb the sweetness.
- Dry the Cranberries:
- Using a slotted spoon, transfer the cranberries to a wire rack set over a baking sheet lined with parchment paper. Spread them out in a single layer, ensuring they are not touching.
- Allow the cranberries to dry at room temperature for about 1 hour. They will become sticky as they dry.
- Sugar the Cranberries:
- Place the remaining 1/2 cup (100g) of sugar in a shallow bowl. Working in small batches, roll the sticky cranberries in the sugar until they are well coated, giving them a frosted appearance.
- Once coated, place the sugared cranberries back on the wire rack to dry for an additional hour.
Notes
- Storage:ย Store sugared cranberries lightly covered at room temperature or in the refrigerator for up to a few days. If they start to look a little wet, toss them in a bit more sugar to refresh their appearance.
- Usage:ย These candied cranberries are perfect for garnishing cakes, pies, cocktails, or adding to a holiday cheese board. They also make a tasty sweet-tart snack on their own.
