- 2 cups cooked chicken breast, shredded or diced
- 1 cup plain Greek yogurt
- 1 cucumber, peeled and grated (excess water squeezed out)
- 2 garlic cloves, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon fresh dill, chopped (or 1 tsp dried dill)
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 red onion, finely diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup kalamata olives, sliced (optional)
Instructions
- In a large bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, fresh dill, parsley, salt, and black pepper. Mix well to make the tzatziki sauce.
- Add the cooked chicken, red onion, cherry tomatoes, and optional feta cheese and olives to the bowl with the tzatziki sauce.
- Toss everything together until the chicken and vegetables are evenly coated with the sauce.
- Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
- Serve the Tzatziki Chicken Salad chilled or at room temperature. You can enjoy it on its own, inside pita bread, or over a fresh salad.
Notes
- For added crunch, toss in diced cucumbers or bell peppers.
- You can substitute Greek yogurt with regular yogurt, but the texture will be less thick.
