Description

This Tzatziki Chicken Salad is a light, refreshing, and flavorful dish combining tender chicken with creamy homemade tzatziki sauce, fresh vegetables, and herbs. Itโ€™s perfect for a quick lunch, picnic, or a healthy dinner option. Serve it in pita bread, over a bed of greens, or enjoy it on its own!

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup plain Greek yogurt
  • 1 cucumber, peeled and grated (excess water squeezed out)
  • 2 garlic cloves, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped (or 1 tsp dried dill)
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 red onion, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup kalamata olives, sliced (optional)

Instructions

  1. In a large bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, fresh dill, parsley, salt, and black pepper. Mix well to make the tzatziki sauce.
  2. Add the cooked chicken, red onion, cherry tomatoes, and optional feta cheese and olives to the bowl with the tzatziki sauce.
  3. Toss everything together until the chicken and vegetables are evenly coated with the sauce.
  4. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  5. Serve the Tzatziki Chicken Salad chilled or at room temperature. You can enjoy it on its own, inside pita bread, or over a fresh salad.

Notes

  • For added crunch, toss in diced cucumbers or bell peppers.
  • You can substitute Greek yogurt with regular yogurt, but the texture will be less thick.
  • This salad can be stored in the fridge for up to 3 days.
